HEALTHY BREAKFAST IDEAS: SWEET POTATO TOASTS WITH AVOCADO OR MAKE GUACAMOLE Ingredients (how much of each you want is just an idea): Sweet potato large and wide extra virgin olive oil ripe avocado hummus Lemon blueberries Sweet or hot red paprika fresh herbs Pepper Salt Preparation: Preheat the oven to 180º C and prepare a tray or source. Wash and dry the sweet potato well, brush the skin or, directly, peel them. With a good knife, cut slices about 5-6 cm thick, trying to get wide portions. “Paint” with olive oil and season very lightly, on both sides. Bake for 10 minutes or until just beginning to brown, flip and continue baking until desired doneness, 10 to 20 minutes more.
