Ingredients (6 People): 2 units of onion. 1 pack of cooked spinach leaves. 8 eggs. 1 tsp. of salt. Freshly ground black pepper. Olive or coconut oil Preparation: Cook the spinach leaves in boiling salted water for 10 minutes. Drain and shred them. Sweat the sliced onions in a pan with 1/2 tablespoon of olive oil. Beat the eggs and mix with the crushed spinach and sweated onions. Place a few drops of olive or coconut oil in a non-stick frying pan. Pour the mixture and cook (covered) over low heat. When it sets, turn it over onto a plate and place it back in the pan to cook on both sides. Once ready, remove from heat and let cool.
